An oven with a water system inside it
A Wolf convection steam oven is two machines. One is a convection oven with an element and a fan. The other is a small water system: a reservoir or a plumbed inlet, a pump, a steam generator, sensors to tell the control how much water is there, and a drain path. Most service calls are about the water part.
Miami-Dade and Broward water carries a lot of minerals. Scale builds in the pump and the steam generator, the reservoir sensor starts to misread, and the oven asks for water it already has or stops making steam halfway through a cycle. Skipped descale cycles make it worse. Plumbed models swap the reservoir for an inlet valve and a drain line, so we also see clogged drains and inlet valves stuck partly open.
Water path first, electronics second
We check the reservoir and its contacts, run the pump, look at the steam generator for scale and measure its heater, and on plumbed units check inlet pressure and the drain. A full descale is often part of the repair. Then the convection side: element, fan, temperature sensor, door seal. A steam oven with a worn door gasket leaks steam into the cabinet and can damage the millwork, so we look at that every visit.
Pumps, sensors and gaskets come through Sub-Zero Group distribution, usually in a few business days, and we say so at the quote. The $59 diagnostic is free when you approve the repair, and every repair carries the 90-day parts and labor warranty.
Wolf steam oven repair — failures we see.
Documented from the platform, not a brochure.
Scale or dirt on the reservoir contacts, a pump that can't pull water, or a level sensor fault. Cleaning and descaling fix many of these; a failed pump or sensor gets replaced.
The cycle didn't finish, or scale is heavy enough that one cycle isn't enough. We run it through properly and check that the counter resets.
Steam generator scaled shut or its heater failed. Descale first, then measure the heater.
A worn door gasket, a cracked hose or a blocked drain on plumbed models. We trace the leak before the cabinet takes damage.
Gasket worn or door out of alignment. Steam in the cabinet will swell wood panels over time.
Low inlet pressure, a clogged inlet screen, or an inlet valve sticking. Check the supply, then the valve.
The ring element or the fan motor. Same diagnostics as any Wolf convection oven.
Steam getting behind the panel, or the control. We dry and test before quoting a control.

Wolf steam oven repair — questions we get
My Wolf steam oven says fill the reservoir but it's full. Why?
Usually scale or residue on the reservoir contacts, or a pump that can't draw water. A descale and cleaning fixes many of these. If not, the pump or the level sensor gets replaced.
How often should a Wolf steam oven be descaled in South Florida?
Follow the oven's prompt and don't skip it. Our local water is hard, so the prompt comes up more often than it would elsewhere. Using filtered water in the reservoir helps.
Do you repair plumbed Wolf steam ovens?
Yes. Plumbed models trade the reservoir for an inlet valve and a drain line. We check pressure, the inlet screen and the drain as part of the diagnostic.
Are you an authorized Wolf service center?
No. Berne is an independent service company, not affiliated with Sub-Zero Group. Under factory warranty, use factory service. Out of warranty, we're usually faster to schedule.
